Pasta con Sarde


Pasta con Sarde e Finocchio, a Sicilian delicacy, is the most delectable pasta that can possibly be made on this side of heaven. How fortunate that my mother, who was born in Sicily and was a cook without a peer, taught my wife how to prepare it. We hope we can induce you readers to try it.
Of Arabic origin, Pasta con Sarde e Finocchio is in fact indigenous only to the Western side of Sicily. In America, hardly anyone knows about it and it isn't featured in any traditional Italian restaurants. So, if you wish to savor this exquisite dish before you have it in heaven, you will have to make it yourself. With luck, you will find the canned "condimento" import in your local Italian deli. It comes in a flat yellow can and the most authentic brand is made by Pensabene.
Allow the contents of the can to simmer for several minutes. It is a green sauce, made with fennel leaves, onion, garlic, small pieces of sardines, salt, pepper, currants, pine nuts and olive oil. Then gently layer it over freshly boiled linguini. As the aromatic vapors rise from the dish, lightly dust the pasta with toasted, herbed bread crumbs. Buon appetito!
If we owe the Mafia nothing else, we are deeply in their debt for their having zealously preserved this Arabian legacy. Now, if Osama has never had it and we can get him to try it, I am sure he would emerge ecstatically from his cave, salaam deeply and promptly call off this jihad.

Upon reading your recipe, I recall that my mom and her sisters also made the same dish annually on Christmas Eve. It was one of the seven fish dishes that was prepared the night before Christmas. As many of the family would attend this festive occasion and partake of this tradition. It brings back many happy memories of my youth and celebrations we shared as a family.

Dear Hornblower,
Many, many times in the past, I have had Pasta con sarde e finocchio and always savored it more than anything else I ever ate. It was my favorite pasta. This “delectable dish” as you say, is a tribute to my Arabic-Sicilian Heritage. But worst of all outrages, you Americans have cut off my supply of Condimenti di Pensabene. And if you want to know the freakin’ truth, in all of Pakistan and Afghanistan I can’t even get linguini anymore. So, if there is something you can do to reconnect me to heaven, I would be ever so grateful. Do it and I will give serious consideration to calling off my counter-crusade against the West.

Dear Dom,

I wanted to let you know that one of my friends - Ron Salvatore - who you met at my mother's funeral luncheon - is a big fan of your blog.

He especially likes the one about pasta con sarde. He went on the website that you recommended so he could buy a few cans of the sarde paste and by the time he finished, he spent about $150. He said it was like taking a walk down Arthur Avenue. He's sending you the bill! (just kidding)
